Great Fish Recipes

We are not going to give you any so-so recipes. These are ones that we use ourselves and love. They are easy and with the fresh fish available in Gulf Shores,  anyone can cook great fish.
Do not buy your fish from local chain grocery stores. Local chain grocery stores do not sell local fish. Buy your fish from local seafood shops or the fisheries themselves.

Fish Fillets Vera Cruzana Recipe

Vera Cruz (True Cross) is a town on the coast of Mexico
that is famous for good seafood dishes. This is really easy and fabulous.

OK--New Note: This spring (2007) I got a call from the PR agency of a chain of 500 restaurants ... they wanted to use this recipe and offer the dish in a special summer menu of 'Festival Winning Recipes'... problem is, we have the SHRIMP festival here, not a fish festival and  this recipe has not been a local festival winner. Alas, he called me back and said that they really wanted to use it, but they were sticking to the original concept of using festival winning recipes only. To bad, maybe I coudda been rich or famous !

Fish with Green Sauce Recipe

Easy Baked Fish Fillets- Jan Dickerson
My sister Cary sent this fabo fish recipe

3 or 4 fish fillets (4 to 6 oz. each)
about 6 oz. fresh spinach
¼ c. fresh parsley snipped (or 2 t. dried)
2 teaspoons brown mustard
1 T. olive oil or sesame oil (can use up to 3 T. if you want to)
2 teaspoons lemon juice
1 T. soy sauce
1/8 to ¼ c. sesame seed (white or black)
1/8 teaspoon cayenne pepper (2 shakes)


Spread clean spinach leaves in a large casserole dish sprayed w/ oil.
Lay rinsed fish fillets on top.
Mix up the remaining ingredients and pour over the fish.

Bake in a 450 degree oven 20 min. or so until fish is cooked.

I usually try to buy the smaller fish since information has been published about the mercury levels in the larger predator fish sometimes being high, and this causing problems for people who eat a lot of fish. I really do love a rare, grilled, thick tuna steak from a good restaurant so at home I balance this by purchasing & cooking the smaller fish. I read in a Mobile newspaper that a good rule of thumb is 'if it is too big for the pan, throw it in the can' meaning if the whole fish is larger than a pan, don't eat it. We eat a lot of fish, so I often buy grouper, flounder, snapper, trigger (when I can get it) and sometimes the pond raised tilapia that is so white and mild like orange roughy. When I make gumbo, I often buy USA Southern farm raised catfish to use along with shrimp and crawfish. Just be sure to ask if it is a product of the USA and not imported, Asian catfish. If purchasing seafood pre-wrapped & frozen, flip the package over and read the small print--these merchandisers can be very deceptive. They will package Asian crawfish and label it as 'Louisiana Crawfish' on the front of the package and in tiny print on the back it will say "Product of China" or "Thailand" , etc.
